What It Is
Chiffonade is a technique where you stack large-leaf herbs or greens, roll them into a tight cylinder, and slice across to produce delicate ribbons.
Step-by-Step
- 1Stack 6–10 leaves of basil on top of each other.
- 2Roll the stack tightly from one long side to the other, like a cigar.
- 3Using a sharp knife, slice across the roll in 1–2 mm increments.
- 4Gently separate the ribbons with your fingers.
