Your cutting board should be softer than your knife edge. Hard surfaces dull your blade rapidly.
Best Choices
- 1End-grain hardwood (maple, walnut).
- 2Soft plastic (HDPE).
- 3Rubber (Asahi/Hasegawa style).
Avoid
- 1Glass — instantly dulls any knife.
- 2Granite or marble.
