Mince Garlic Without a Press
A simple knife-only technique that produces finer garlic than any press, with better flavor and less cleanup.

Why Skip the Press
A garlic press crushes cells unevenly and leaves behind fibers. A knife mince gives you more control over texture and releases allicin more gradually.
The Method
- 1Peel the clove. Trim the root end.
- 2Crush lightly with the flat of your knife.
- 3Slice thinly lengthwise, then crosswise.
- 4Sprinkle a pinch of salt and use the flat of the blade to scrape-smear against the board until it becomes a paste.
