Carbon steel takes a keener edge, sharpens more easily, and gives superior cutting feedback. The tradeoff: it reacts with moisture and acid.
Building a Patina
- 1A patina is a dark oxidation layer that protects from rust.
- 2Force one by slicing acidic foods: onions, apples, mustard.
- 3Or apply a thin layer of mustard, leave 10 minutes, wash off.
Daily Care
- 1Wipe dry immediately after every use.
- 2Never leave sitting in water.
- 3Apply food-safe mineral oil if storing for days.
- 4Scrub rust spots with a cork dipped in Bar Keeper Friend.
